From the Garden~ Easy Herbal Pesto

My favorite recipes are always the easiest-- things I can use in a myriad of ways, store if needed, and tweak based on what I have on hand (one of the most important things to me when cooking). Homemade pesto is one of my favorite simple recipes that fits all of these criteria. From this recipe, I made a decent size jar that we've been using all summer for everything from fresh pasta to grilled salmon, veggie-heavy salads, and everything in between. I hope you enjoy and have fun making this recipe your own!

Herbal Pesto Recipe

two handfuls of fresh basil (sometimes I'll use parsley or cilantro depending on what I have available)

optional: a handful of kale or greens of choice (I like to add this in to boost the nutrients)

juice of one lemon

one clove of fresh garlic

1/4 cup nut(s) of choice (I used what I had on hand-- a mix of brazil nuts, walnuts, and pine nuts)

3/4-1/2 cup of olive oil

a splash of apple cider vinegar

salt to taste

simply add all of the ingredients to a blender et voilà!
